Unique wine with no dosage added and therefore one of the driest Champagnes, the wine has a pale yellow color with fine bubbles, fresh yellow fruit nose and bracingly dry and fresh citrus fruit flavors in a clean finish; formerly named Château of Aÿ, Ayala was the dowry to a Spanish aristocrat Edmond de Ayala in 1860 and is one of the most prestigious Champagne houses, making new style Champagnes with low sugar dosage.
Serve at 8°C; nice as an aperitif or with seafood; also nice with light Asian food like sushi.
2.5+ years for bottle aging.
